Although I won't say its impossible to do this, the only people
I've seen doing it have a Thai husband or wife who's family owns
the guesthouse / bar. It's a shame really because I guess it would
be a very cheap way to stay in the country but I think its very
unlikely for the following reasons.
If its not tourist season then business is slack and they don't
need anyone. Right? So end of story there.
In peak seasons when there are a lot of tourists though, you'd
just be eating into their profit. Think about it. You want a room
and food in exchange for work for lets say a month. The guesthouse,
if its family run, has essentially free labor. If not family run
then they can hire someone for about 2000 baht a month. Nothing
in western terms, and even a budget back packer is going to spend
a minimum of, I'd say, about 15,000 Baht at the guesthouse on room
and food alone. This is for your bottom of the range budget traveler
who doesn't smoke or drink too much. That's a lot of money in Thai
terms which they wouldn't be getting because you're staying in the
room and they have to feed you. Unfortunately it just doesn't seem
like its going to happen because of the damn economics of the thing.
In your position I'd save up that 15,000 Baht a month, or more
ideally, plus airfare and enjoy a work free holiday for as long
as I could make my money last. Although 15,000 Baht can go a long
way in Thailand, it's only about 300 dollars (rough in my head calculation.)
